For many hours the smoke penetrates deep into the cinnamon bark leaving a very robust and unique smoke flavor. This spice has proven to be very versatile. You can enjoy a rich smoky flavor when sprinkling it on top of a finished dish such as oatmeal, fried apples, pork medallions, sweet potatoes, or even coffee. When adding to a batter during baking, it leaves behind a more gentle and subtle smoky flavor. Great on french toast topped with maple syrup!

I spent many weeks smoking batch after batch of cinnamon sticks using different temperatures, cook times, and blends of hardwoods trying to figure out the perfect combination that leaves the hint of smokiness that you mentioned.
