drizzle a small amount of oil in a deep sauté pan, salt and pepper your beef and sear. remove beef from the pan and add your butter, onions and garlic. sauté on medium heat till tender. once tender, mix in the flour. once flour is fully mixed slowly add in the beef stock. once all the stock is in the pan add the mustard and sour cream. now is time to add your dry spices, cayenne, blackened, nutmeg and salt and pepper. let simmer for 5 minutes. add the sliced beef, peas and mushrooms and let simmer for another 5 minutes. once five minutes is up, remove from heat and mix in the sour cream. toss with the cooked egg noodles and serve.
