remove the ribs from the packaging. flip to bone side up, using a small (pairing) knife remove the excess membrane from the bones. once complete, lay out approx. 2 feet of parchment paper and aluminum foil. generously rub down the ribs with the smoky spice. once rubbed down add the lime juice to the jerk sauce and brush over the ribs. now, wrap in the parchment, then foil. place on baking sheet and put in a 325-degree oven for 3.5 hours. at this point the ribs will be ready, however, I like to fire up the grill and char them for additional 5 minutes. this can also be obtained by turning on your broiler and placing the meat side up for five minutes.
